Basil help

    So, the bunnies and other rodents devastated my garden, with the exception of the basil. I planted from seed and when all of my peas, cukes and spinach was nibbled to death, I transplanted 16 seedlings throughout the garden. About 12 are really thriving.

    In two weeks, I am going to have a shipload of basil. Beside pesto, how do I use all of my fresh basil? (I don't want to dry it).

    Mr. Rogers, the easiest way to preserve the freshness is by freezing it. Put the basil in a food processor and slowly add olive oil until it forms a paste. Pour into ice cube trays and freeze. Once the cubes are frozen, pop them out and place them into a freezer safe container or freezer bag. Use as needed in sauces, soups, etc. They will usually keep this way for up to 2 years.
