Chili recipe

    I have a fabulous recipe for Cincinnati chili - as close as you'll get to Skyline in VA. Don't have it here right now, but will post later if anyone is interested.

    Thanks T8--reading this thread made my mouth water and reminded me how long it's been since Pats_Fanette prepared her chili. Now that the weather is turning cooler it's about time we added it back in the rotation! I'll be sure to pass on your "props" to the chef!

    If you want a "quick and easy" chili mix, I suggest Six Guns Chili Mix found at most grocery stores (if at Super G go to the very back to the right of the butcher shop). It has nice packets of spices already set and it always comes out great!

    Found this recipe a while ago - - it has a great flavor and texture. Unique and outstanding:

    HARD ROCK CAFE CHILI
    From: Hard Rock Cafe, New York City
    Source: Daily Press, Cook's Exchange by Veronica Hill

    2 tablespoons vegetable oil
    1 large onion, chopped
    3 large cloves garlic, crushed
    2 1/2 pounds lean beef chuck, coarsely ground for chili
    2 tablespoons tomato paste
    2 tablespoons Worcestershire sauce
    2 tablespoons barbecue sauce
    2 tablespoons chili powder
    1 tablespoon soy sauce
    2 teaspoons celery salt
    1 teaspoon ground cumin
    1 teaspoon freshly ground black pepper
    1 teaspoon seasoned salt
    1 teaspoon instant minced onion
    1 teaspoon instant minced garlic
    Dash ground red cayenne pepper
    1 (15 ounce) can whole tomatoes, chopped, with liquid
    3/4 cup cup drained and rinsed red kidney beans, about half 16-ounce can
    1 (4 ounce) jar pimentos, coarsely chopped, with liquid
    1 medium-size green bell pepper, cored, seeded and chopped
    1/4 cup diced celery

    In 5 quart saucepot over medium high heat, heat oil, add onion and crushed garlic; cook 5 minutes, stirring frequently until softened.

    Add ground beef; cook about 6 minutes, stirring frequently until meat is browned.

    Meanwhile, in small bowl combine tomato paste, Worcestershire, barbecue sauce, chili powder, brown sugar, soy sauce, celery salt, cumin, black pepper, seasoned salt, minced onion, minced garlic and ground red pepper; stir well to mix.

    Drain fat off browned beef; stir in seasoning mixture.

    Bring to simmer over medium heat; cook, stirring, 5 minutes.

    Add tomatoes with their liquid and kidney beans; reduce heat to low. Cook, covered, 15 minutes, uncovering occasionally to stir.

    Add pimentos with their liquid, green pepper and celery; cook, uncovered, 5 minutes longer. stirring occasionally.

    Serve this with crackers on the side.

    Makes 8 to 10 servings.

    OK, here it is. I clipped the recipe from the Cincinnati Enquirer in the late 70's and it came from Murray Brothers, which was one of the shops underneath the old Riverfront Stadium.

    CINCINNATI CHILI

    4 large onions, finely chopped
    1 tablespoon oil
    4 garlic cloves, finely chopped
    2 pounds ground chuck or round,
    finely ground
    4 tablespoons hot Mexican chili powder
    1 teaspoon paprika
    1 teaspoon salt
    1/4 teaspoon thyme
    1/8 teaspoon ground allspice
    1/8 teaspoon nutmeg
    2 tablespoons cider vinegar
    1 small can tomato paste
    1-1/2 quarts water
    1 ounce bittersweet chocolate
    1 tablespoon cumin
    1 teaspoon oregano
    1 teaspoon basil
    1/2 teaspoon ground mixed pickling spices
    1 bay leaf
    For serving:
    spaghetti
    chopped onions
    mild cheddar or colby cheese, grated
    kidney beans
    oyster crackers

    Sauté onion and garlic in oil until golden brown. Add ground beef, cook until brown. Add remaining ingredients and cook for 3 hours over low heat. A potato masher works well to thoroughly break apart the meat. I sometimes double the amount of spices, and add a little more water to make it thinner. Can be cooked in a crockpot; 10-12 hours on low (brown meat first). Serve as follows, with oyster crackers.
