Uncle Maddio's pizza

    I went twice this past week. I had high hopes for it, with its shiny new store and menu listing high quality ingredients and lots of topping selections. Unfortunately, it was a let down. Both times, the pizza crusts had an "oily cardboard" taste/texture. (I tried wheat once and then regular.) Plus, the ordering process is chaotic. It's not "make your own" any more than any other pizza place is "make your own." The only difference is that you order from the person who will be making your order, and he or she doesn't write it down or ring it up so it's prone to error. Then you make your way down to the end of the counter to pay, and the cashier also seems a bit uncertain about the order. I would forgive them these service issues (or try to bypass the issues altogether by ordering by phone and then picking up) if only the pizza were delicious. I guess I'll continue to mourn the loss of American Flatbread and keep making my own pizza.

    We tried it too and were disappointed. We had visited a similar restaurant in San Diego several months ago and it was great. My wife and I said that if someone opened the same concept restaurant in Ashburn it would be a huge success. Unfortunately, both the quality of the food and the quality of the service are lacking.

    Was the San Diego restaurant Pizza Studio on Broadway? If so I agree- great concept and great pizza. Like a Subway for pizza and so cheap! Too bad it's not being implemented well. Where is Uncle Maddio's?

    Wouldn't it have been wonderful if American Flatbread had survived as an order-at-the-counter type place? High-quality food without the extra expense of tipping?

    I am so sorry to hear that you did not enjoy your experiences at Uncle Maddio's Pizza Joint at the Dulles 28 Centre. My wife and I are the owners of the location and we are also residents here in the Broadlands. With our children at Briar Woods, Eagle Ridge and Hillside, we care deeply about serving this community.

    As a new restaurant just trying to get off the ground, we obviously have some fine-tuning to do. But we are striving to grow and improve every single day. Feedback such as yours, while disappointing to hear, is an opportunity for us to do this.

    We make both our traditional white and our whole wheat dough fresh in-house each day. And our crust is the number one thing guests rave about — a little crispy, a little chewy, not too thick, not too thin. (Our gluten-free crust is made elsewhere for safety reasons, but people have been loving it too.)

    I certainly would like the chance to earn you back as customers. I would love to meet with you at the restaurant, show you how our dough, pizza sauces and salad dressings are made from scratch, talk about our efforts to serve items such as hormone-free chicken and locally grown veggies, and the extra care we take with gluten-free orders (changing gloves, isolated of ingredients, separate cutting and serving utensils) as well as give you a tour of Uncle Maddio's.     Well ... based on the owner's very thoughtful reply last fall, I did try Uncle Maddio's once more about 6 months after the week of my first visit. Unfortunately, I still did not like the pizza, and the ordering process still seemed to be disorganized. It's just not for me.

    I continue to enjoy Spinfire in One Loudoun and also love the new Whole Foods' pizza bar. Fireworks is my current favorite sit-down place, and I look forward to the opening of Matchbox as well.

    Thanks for the feedback, lauralynne! We go to Fireworks just about every week and so it sounds like we're on the same page. The food it great and the service is spectacular. The Tuskies group (Tuscarora Mill, Fireworks Pizza, South Street Under, and Magnolias) continue to knock it out of the park!

    VoiceGuy, have you had Tuskies' all-you-can-eat brunch? I absolutely love it (even though there's no pizza at it :) And South Street Under's delicious ciabatta bread ... I could go on and on about it. The Tuskies' group is absolutely amazing; I don't know how they do it.

    It is a shame about Uncle Maddio's and the overly-oily crust, IMHO. I go to the Wegman's shopping center all the time and wanted so badly to like the Maddio's pizza. I will say that when I last went to Maddio's (it was about 8:30 p.m. on a weeknight), it looked as though they had recently finished a dinner rush (there were a bunch of tables waiting to be cleared, etc.) so the food/concept must appeal to some.

    Have not tried the brunch but have heard it's pretty darn good and for a decent price. Have a number of friends who hang out there on Sundays for the brunch.

    As for Uncle Maddio's, we were at PetCo on Sunday and were looking for a place to eat. The parking lot in front of Uncle Maddio's looked full so we thought about giving it a shot but wanted to check out things online first. Must be pretty good based on the crowd. Like all Ashburn area businesses, we want you to do well! We'll give it a shot at some point.

    I've been to Maddio's 4-5 times and I like it. Didn't seem greasy to me and the pizzas were good. The service varies based on who is making the pizza but that doesn't bother me much. Fireworks in Leesburg is my favorite, but Maddio's is good for being closer. That's my two cents.
