Professional Knife Sharpening?

    My henckels set is planning a mutiny if I don't promise to take better care of them in the new year. I have some home sharpening tools, but there ain't nuthin' like a good, professional sharpening.

    Any suggestions for where I should take them? Thanks!

    I asked this very question a couple years ago and got no response. I would love to get our set of knives professionally sharpened, so I look forward to hearing from anyone who has any input.

    I've never tried them but Sur la Table in Tyson's Galleria does it, I belive. I think they charge $1/ blade inch.

    It really isn't so hard to do it yourself. Purchase a decent sized water-stone, add water until it is not absorbed, sharpen one side of the blade then the other, adding water when the surface starts to dry out. Touch-up on a steel every now and then to keep the edge.

    And, don't jumble you knives in the kitchen drawer, that's a sure way to lose the edges.

    Sharse - purchased a water stone from Williams Sonoma - and LOVE IT!

    When chesepeake knives went out of business I decided to take the plundge and purchase the stone - its pricey but worth it.

    I do know you can have Williams do it but it's $5 a blade (with 10+ Wuthofs twice a year the stone paid for its self in short order).

    Come on down and you can try the stone...
