Need Advice Egg Free Cupcakes?

    Hello,
    Need some advice on egg allergies in kids. My daughter, now 10 months is allergic to eggs right now (hoping she grows out of it). We have her first birthday party coming up the end of August, and instead of letting her dive into the regular cake, which contains eggs... to be safe and not have to give her Benadryl! I would like to find a place that sells egg free baked goods so she can have her own cupcake to eat. ..... Any advice?

    Chantel's Bakery does all kinds of "allergy friendly" cakes. You may want to ask them.
    You could also make one and sub applesauce for eggs, or try buying a cherrybrook kitchens cake mix- they used to sell them at the super target in leesburg...not sure if they still do.
    good luck! our daughter outgrew her egg allergy when she turned 3- i hope yours does too! total avoidance is the best way to go. i made pudding pies for her bdays before that.

    I had a really bad experience with Chantel's. Extremely unreliable. Cake was supposed to be done a day before the party and it wasn't done until after the party :angryfire: . on top of that the was unbelievably rude :angryfire:.
    Another friend of mine ordered from there and they mistakenly put the dairy in there. Just a little oops on their part but really scary for the allergic kid.

    There is another person who I think does allergen free cakes (& I think only allergen free, not sure though). She is a mom & her own kid has egg allergy.

    Name is Lemonade bakery in Manassas & she delivers to NOVA for very small fee (I think only $5 for Loudoun county).

    Also you can try suggestion from above post & buy box of Cherrybrook kitchen chocolate cake mix, It comes out little dense but not too bad. apparently chocolate mix is better than yellow cake mix. HTH

    I always make cupcakes from the recipe on the back of the Hershey's Cocoa. I then use Energ egg replacer for the "eggs." You can get it at Whole foods or Wegmans. I then keep extra cupcakes in the freezer if my son has a party to go to. They taste like Hostess cupcakes without the cream filling.

    PM me if you want some other egg free recipes. We found out about my son's allergy when he was 11 months old and he is almost 7 now so I have may be able to answer some other questions if you have any.

    If you can still use the regular box cake mixes you can try two of my favorites (I call them low fat but they work!)

    1. Spice cake mix and a 15 oz can of pureed pumpkin. Make sure it's real pumpkin, not pumpkin pie filling. That's all you need. Mix together really well and bake according to box directions. No oil and no eggs. :).

    2. Brownie mix and 15 oz can of black beans. Pour the beans into a blender/chopper and puree until smooth. Add to the brownies and mix well. Bake according to directions. The brownies come out a little flatter, but taste the same.

    You might be able to add the pumpkin into another kind of mix besides spice. I've only tried spice....You could also cut the brownies into little pieces and add icing letters on them for "brownie bites." You could also frost or coat with melted chocolate before icing.....

    Here's an awesome foolproof recipe for eggless cake or cupcakes. My son has thankfully outgrown all of his many allergies so I totally know where you are coming from.

    Westporter Pudding Cake

    1 box Duncan Hines Classic Yellow Cake Mix
    1 box 3.4 oz. Jello Instant Pudding (Vanilla or French Vanilla)
    1 1/2 c. ginger ale
    1/3 c. vegetable oil
    1 t. baking powder
    6 T. flour

    Bake @ 350 in greased pan 30-40 mins. Cool 20 mins in pan on rack.

    Nobody will ever know that it's eggless. Tastes and looks exactly like regular cake!

    They sometimes become a little more crumbly if that is a word. They still taste good. They do get stale within a day or 2 because they are from scratch. It is amazing what the preservatives in the cake mixes do to stay fresh for so long.

    VTHokie--I will try your recipe too! That sounds good.

    BTW. The egg replacer ar Wegmans is in the Natural food section across from the cold food on the bottom shelf. The Cherrybrook Kitchen mixes are in the same aisle on the top shelf. I know it is hard to find sometimes if you don't know where to look.

    over 6 months they are allowed to have egg yolks.

    regardless, we found out about the egg allergy due to the egg batter we used in french toast that we fed her.

    Chocolate!! I first used the pumpkin with Spice and they were very good but when I made chocolate ones - YUM-O! So moist and good and you'd never know there was pumpkin in there. The kids (and moms!) always gobbled them up.

    you can use a can of sprite or gingerale to replace the eggs - turn out great!

    I also have a little one with an egg allergy. It is good to know that there is an egg-free bakery out there!

    For her first birthday, we used a mix and the Ener-G egg replacer (which BTW they also have at the Ryan Park Giant on the top shelf in the baking aisle). The cupcakes turned out well.

    I have been experimenting for birthday number 2 (this weekend!). I tried the soda can trick (just add a can of Sprite --or another soda--to a mix and bake), and it seemed a little too sweet for me. Applesauce (I think it is 1/4c=1 egg) turned out OK. There are lots of recipes for eggless chocolate cake out there (look for "wacky" cake or just "eggless cake"), but the one I tried was a little dry and bland.

    Just thought that you might wish to check out Ener-g's web site for book offers, coupons, info on products, etc. Ener-g is a great GF (Gluten-Free) product not just for egg replacement.

    Since I have a Food Science/Nutrition degree, I can understood well a mother's concern for allergies. One of my quads has a gluten allergy and one of the other kids has seafood allergies. Finding GF products is hard to do. I have several resources available not just for Ener-g but other GF products and reading information if you are interested. Just PM me.

    Also, if you have allergic reactions to various foods--not just GF--PM me or ask on a post about certain allergies. I can assist with the information that you need--FREE!.

    Also, I know I am "beating my own drum" sometimes--but United Natural Foods Buying Club (several--about 15 families--from Ashburn/Broadlands areas) have joined our Buying Club for the LARGE assortment of Organic, Natural, and Gluten-Free products that Whole Foods does not or cannot carry. We have access to over 30,000 items (read my posts "United Natural Foods Buying Club..." for info) to order from monthly--not just GF items.

    We can order meats, seafoods, GF bakery products, etc. Not just for people with allergic reactions to certain foods but all foods! PM me or visit Maureen at the Nature Center in Broadlands. When I dropped off free strawberries from our farm several months ago, I left a United Foods catalog with her receptionist.

    Ask Maureen for the catalog and you can look through the catalog. If the Nature Center does not have the catalog, PM me and when I return from our Florida vacation, I will drop off a current catalog copy.

    My daughter (now 7) was diagnosed with egg allergy at 9 months of age. For her first birthday, I made an ice cream cake (way too much work, IMHO). For her second birthday I used a cake recipe that did not have egg in it; it was chocolate with chocolate chips. Unfortunately, I don't have that recipe online; otherwise I would share it. I just have a photocopy. Since then I have used the Wacky Cake recipe with good results. The wacky cake cupcakes also freeze well and they have more structure than the soda/cake mix cupcakes.

    Here's the wacky cake recipe I use:
    Wacky Cake - Chocolate
    1 1/2 c flour
    1 c sugar
    3 Tbsp cocoa powder
    1 tsp baking soda
    1/2 tsp salt
    1 tsp vanilla
    1 Tbsp vinegar
    5 tbsp oil
    1 cup water
    Combine dry ingredients in mixing bowl and mix thoroughly. Mix wet ingredients in a separate bowl and stir to combine. Add wet ingredients to dry ingredients and mix until smooth batter. Pour into greased and floured pan or cupcakes. Bake in preheated 350F oven 35 minutes for until tests done (about 20 minutes for cupcakes).
    Vanilla:
    - omit cocoa. Double amt of vanilla.
    Spice:
    - omit cocoa. Add 1 Tbps pumpkin pie spice.
    Orange:
    - omit cocoa & vinegar. Substitute OJ for water


    I make the vanilla version; it doesn't look yellow like traditional yellow cake (because it lacks egg). We recently used the Cherrybrook Kitchen's yellow cake mix and DD liked it. I have not used Ener-G egg replacer yet.

    There's also Divvies (www.divvies.com) which makes egg and nut free cupcakes, cookies (very yummy), and caramel corn. My DD is also allergic to peanuts, tree nuts, sesame, cucumber, and cantaloupe, so Divvies is a fave in our house. They make the best oatmeal chocolate chip cookies I've had (except for my mom's).

    Baking Without Eggs is a recipe book that is worth looking at. Also, the Food Allergy and Anaphylaxsis Network (www.foodallergy.org) publishes cookbooks as well.

    Good luck. I hope that your child outgrows the allergy and as another poster mentioned, avoidance is the best course of action.

    ETA: Divvies tests all its ingredients for allergens and maintains a dedicated facility. IMHO, that is much safer than using a bakery that offers to make a cake for you without your allergen. Chantel's makes cakes with eggs and nuts, so cross contamination is a risk. That's not in my comfort zone but it might be in someone else's.

    We too have a child with egg allergies- and nut/peanut/sesame and dairy. We live by the wacky cake recipe:) It truly is easy and when I have sent it to the preschool the teachers ask for it again and again.

    We use the ener-g egg replacer in most of our baking....it works well, hardest part it mixing it so it doesn't clump. If you are going to order the chocolate cupcakes from Divvies I suggest saving the money b/c it is the wacky cake recipe and you can do it at home. They were on Martha Stewart making them once. If not I've heard great things about their other projects. If you are looking for more egg free baking items feel free to email and I'll be happy to give you what we have.
