Need Advice Recipes for my CSA veggies

    was this stuff in the delivery yesterday? What's it look like? I don't know what to do with most of the veggies I get. I don't even recognize what they are! Except last week. I'm very familiar with kale now. And strawberries.

    This week there are scallion type things? I have NO idea what the rest is, but I would really like some recipe ideas too! I tried the kale chips last week and wow, I suck at cooking. They disintegrated when I picked them up. I did saute the kale in olive oil and garlic salt and that was alright...didn't cook it enough though.

    I found this recipe yesterday and tried it. Was very good.

    2 bunches swiss chard-shredded (remove tough ribs)
    4 cloves garlic-chopped finely
    1 shallot-chopped finely
    pinch of red pepper flakes
    olive oil or coconut oil

    Saute garlic, shallot and red pepper flakes in oil. Add swiss chard and mix with other ingredients. Saute until desired doneness. You can add a little balsamic vinegar or salt to taste.

    Be sure to wash your greens really well as I found a ladybug on mine yesterday. It was very happy to get out in my garden. I am always happy to find living bugs on my veggies since I know they didn't get the insecticide treatment.

    The greens were a mixed bunch but we washed, dried, chopped and had a side salad with chicken. I grilled half the scallions, chopped the rest for an omelet.
    Berries were a disappointment this week. Wish we had some of the cherries/blackberries that were part of the Upick.

    Wow, these recipes look awesome! I'm definitely going to try the tacos and the one for the creamed swiss chard ribs :clap:

    I love the Rick Bayless recipe, the pictures are incredibly helpful!

    We did it a few weeks ago for strawberries and last week for black raspberries and mint. The sour cherries were available too, but there weren't very many low enough for me to reach.

    I still haven't cooked anything with my CSA produce, except using the scallions in tabouli. I definitely need ideas! Oh, and time to cook, but you guys can't really help with that :)

    Eating Well magazine has great recipes that incorporate seasonal produce as it becomes available. They have a good recipe search tool on their website and an iPhone app.

    I'm going to make a lentil salad with the beets and an orange-beet green salad. Here's a salad recipe-- I couldn't find tangerine juice, so I'm using orange http://www.vegetariantimes.com/recipes/10807?section= I think the lentil salad recipe might have come from Vegetarian Times too.

    I found a Rachael Ray recipe for mac n cheese with chicken and broccoli, so I'm planning to make that but without the chicken (we're vegetarians).

    I made a stew thing with the collards last week out of black eyed peas, tomatoes, rice, onions, and garlic. It's from a Moosewood cookbook. I can post the recipe if anyone's interested.

    So...those of you getting the CSA boxes from Great Country farm. Are you happy with it? Would you do it again?

    I was happy in the beginning but the past few weeks I've been throwing a lot of stuff away right out of the box. Moldy squash, bug infested tomatoes, slimey green beans...

    I know they try to use very little pesticides but all the big worms/caterpillars that are in my box gross me out.

    We're not happy at all with the veggies and we won't be doing it again next year. We'll stick to the guy with the veggie stand on BRR.

    We were not happy with it all. Ended up throwing most of the stuff out--except for the worms, which my boys thought were cool. We are doing farmers markets at this point.

    I should add that we haven't even bothered to pick up our share for the past month...it's been that bad (for us at least).

    I agree with everything that is being said on here about the poor quality and variety in the shares this year. I've done this CSA for 4 or 5 years, missing last year, and have been really disappointed. I believe that everyone on the board who has been dissatisfied should write them with feedback. I plan on it. I've been hoping for the last 5-6 weeks that it would get better, but it never has.

    It's obvious their focus in not on their CSA deliveries anymore. They give their customers very minimal amounts of produce in their bins, and then sell additional produce at their store. At least that is the way it appears to me. It has bothered me that they haven't put potatoes in our bins, yet they had the potato dig last weekend. I can't make it all the way to their farm to dig for potatoes. In years past, they've had plenty of them in the bins.

    The other thing that has bothered me is the quality and quantity of tomatoes this year. We used to get so many tomatoes. Big, beautiful ones. At least 4-5 big ones per box. Now we've gotten one or two lousy ones.

    Anyways, sorry to ramble, but I'm definitely writing all this in an email to them very soon.

    They've offered to let me bring in my farm box and exchange the veggies for fresher ones but I'm not going to trek out there every week. I paid extra for the home delivery.

    I have a neighbor who does the Great Country Farms CSA. I stopped by her house yesterday after my trip to see the guy on Belmont Ridge Road to show her how much I got for $12. I suggested that she take the same amount of money she spends every week up to the guy on Belmont Ridge Road and compare the volume and quality.
