Smoking Christmas Turkeys

    Fellow Foodies--

    Thought I would "relight" this post on "Smoking Christmas Turkeys..." which has info on deepfrying turkeys also. We will also be deepfrying 12 turkeys plus smoking 12 turkeys and smoking 12 hams at our farm for our family of 8 plus 50 other guests (including family members) for our "Feast". Everyone helps out and contributes to our dinner.

    Turkey Day at our farm this year will be our turn to host. For other places to buy local and organic meats, etc.--check out thread under "Area Restaurants..." called "Organics Odyssey...".

    My brother has used the big green egg smoker for years and when I am visiting, we have smoked (ha ha) just about everything you could think of doing. Turkey works very well but you have to be careful and not "over" smoke a turkey. I mean too much intense smoke over a longer time. The turkey is a big chunk of meat and takes 8-10 hours to smoke. We have found that it is also key to keep the moisture pan constantly full of marinade (just replenish as needed as it evaporates). Marinades that work well for smoking include Rosemary, Thyme, Sage and other spices.

    And when you deep fry a Turkey, remember that it only takes about 75-90 minutes. Great stuff and you are right about the higher smoke point of peanut oil. We get ours to about 420 and put the bird in at that point.

    Here are some places that sells DEEPFRIED TURKEYS ONLINE--I recommend.

    I do not know where you can "locally buy" a deepfried turkey in Metro VA areas. Try contacting some of the local BBQ restaurants.

    Jive Turkey is a great resource and was on Food Network's TV show UNWRAPPED highlighting turkeys for the holidays on the 11/12/07 show.

    Here is the only place I found for deepfried turkeys. The Neighborhood Restaurant Group owns several restaurants near Alexandria, VA. Their catering division STAR EVENTS CATERING has deepfried turkeys and the trimmings. I believe that you have to order by NOON, 11/16/07, Friday and pick up the food on Wednesday, 11/21/07 between 2 pm and 8 pm at the Evening Star Cafe. Check the web site and call for details to confirm info.

    One of their restaurants--Vermillion--we have been to and enjoyed.
