Wanted: Pignoli Cookies!

    Anyone know where I can find them? In NJ I can throw a rock and hit a bakery that makes them fresh daily... hopefully I am just missing information ad pignoli cookies are right here in LoCo...

    Redon, I don't know of anything realclose, but you might want to try "The Italian Store" in Arlington.

    A little bit of a drive, but easy to find. Toll Road to 66E, get off at the Spout Run exit, there is a shopping center right there with a Giant, Starbucks, etc...

    In the spirit of disclosure, it has been a while since I have actually been there, but I have a friend who uses them for small parties. Since she is VERY Bronx-Italian, I trust her! ;)

    The Italian Store is awesome!!!! The best sandwhiches and great selection of italian meats. Totally worth the drive!

    guess what- found the recipe on allrecipes.com- they are SO easy to make I baked them myself- and they are excellent! not because I can bake but because ANYONE could do it. 4 ingredients: almond paste, pine nuts, sugar and egg whites... i can't believe something so simple tastes SO good! here's the recipe if anyone wants to skip a drive to Arlington- thanks for that tip though- I might vhevk it out in the future!

    Pignoli Cookies II

    "Also called pine nut cookies. I make them and my family eats them so quickly I have to hide a few so I get some."
    INGREDIENTS:
    1/2 pound almond paste
    3/4 cup white sugar
    2 egg whites
    1/4 cup pine nuts
    DIRECTIONS:
    1. Use a pastry chopper (or food processor) to break up the almond paste into a granulated form. Put in mixing bowl and gradually add the sugar.
    2. In another small bowl, beat the egg whites until stiff. Fold the egg whites into the sugar/almond paste mixture gently.
    3. On a greased and floured cookie sheet, drop a spoonful of the mixture. Press pine nuts into the top of the cookie (you want to cover the top with nuts).
    4. Bake at 325 degrees F (170 degrees C) for 10-12 minutes. Cool on wire rack.

    A HINT- make the dollops about 1/2 teaspoon- smaller is BETTER. :)

    You can also try the Italian Deli in Vienna, right at the intersection of Nutley and Rt 123 in the Village Green Shopping Center. Its not the Italian Store in Arlington, but its a very good mini-version.
    And, right next to it is one of the BEST pie/cake bakeries -ever-!
