Chili recipe

    I've tried various recipes I've found on the web but they just haven't been that tasty (or tasting like chili). Everyone has a special twist or variation and I just want a good, fairly basic chili recipe. I thought I would try here to see if anyone has a tried and true recipe they would be willing to share?

    hmmm- chili is not my strongest dish but the key for me has always been sweet yellow or vidalia onions, big red pinto beans and turkey kelbasa along with ground beef. crushed tomatoes for the base, lots of chili powder, ground mustard, seasonings and a few jalepenos. throw all of that slop into a crock pot and let it go for a few hours. at the end i think i thicken it with a little cornstarch.

    wish i had measurement for ya but i never measure ANYTHING!

    we found that using white onions kicks it up a notch in flavor.

    old BH&G recipe, not fancy, just a basic simple chili.
    1 lb ground meat
    1 c chopped onion2

    Cornstarch!! Ouch, say it isn't so, Redon! Just kidding, but you should try using masa to thicken your chili - if you don't feel like buying masa, Alton Brown of Good Eats provided a great tip - just used crushed tortilla chips! Put these in about an hour before serving, they will thicken up the chili perfectly, and give you that wonderful masa flavor.

    I Cheat. Collect the following:

    2 Lbs Ground Beef
    2 Large, white onions
    2 large cans of red kidney beans
    2 large cans of diced tomatoes
    1 box Carroll Shelby Chili Spice
    Some additional Chili powder
    Minced Garlic
    Vegitable oil
    Large Pot
    Crock Pot

    Get a lrge pot, cover the bottom with Veg Oil. Once hot toss in 1 TBS minced garlic & all chopped up onions. Once the onions start to look clear, add the ground beef.

    In the crock pot add the beans (DO NOT DRAIN!!!) the tomatoes, the spices (throw out the salt packet).

    Once the ground beef is browned add all of that stuff to the crock pot. Add Chilli powder until you are happy with the color.

    Cook on high 2 hours, reduce to low until dinner time. Cook up some cornbread muffins. Add chilis if you want to, unsweetened coco is good as is a bottle of Budweiser.

    never heard of that- i am all for trying something new! thanks for the tip- i like the corn chip idea.

    Best Chili for those who are not too keen on tomatoes

    Pound ground beef, pound ground turkey, salt to taste
    Brown with 1 large vidalia onion, maybe a little garlic minced to taste
    Drain grease
    Add 2 pureed green bell peppers and 8 small peeled tomatillos
    Add 1-2 TBSP cumin
    Add 2-4 cans light and dark kidney beans
    May need to add no MSG beef broth to thin
    OPTIONAL add 2 cans no salt added tomatoes. I choose to omit.

    Serve cincinnati style with noodles, sour cream, and green onions

    Total Yuck for Clydes recipe. And most restaurant chilis for that matter. Worcestershire has anchovies in it and other preservatives. Too much chili powder I am sure in the chili sauce. Make your own! It is SO much better!!!

    Ummmmm.....if you are a no beans person then you should all chip in cash to a fund and try to pay PatsFan's wife some substantial sum of money for her recipe. I'm a beans person, but I have to tell you that there are nights in the early winter where dreams of her carnivorous concoction awaken me with yearning cries of joy and pain. Deep breathing, now. Deep breathing.

    I made a pot this weekend. I like beans and I like texture. My chili is a meal--not a main dish only. I use store bought chili seasoning packages (usually two of them in a full crock pot of meat and beans) and I add cinnamon and cumin. I also use four different kinds of beans--black, garbanzo, red kidney, and cannelini. I also use a fair amount of onion and brown that with both red and green chopped peppers.

    Safeway has a seasoned ground turkey that really works well in chili.

    I make mine with Guiness and also use cut up stew beef to make it more hearty. I've also made it with cut up pork roast too. It's yummy :)

    Ingredients
    2 tablespoons extra-virgin olive oil
    1 large onion, chopped
    4 cloves garlic, diced
    4 jalapeno peppers, seeded and chopped (leave seeds in for spicy)
    1 pound ground turkey meat
    1 pound ground pork
    1-2 pounds beef stew meat
    2 envelopes taco seasoning
    1 11 oz bottle Guinness beer
    1 28oz can of chili style diced tomatoes
    1 14oz can of regular diced tomatoes
    2 14oz cans pinto beans
    1 14oz can kidney beans
    1 14oz can black eyed peas
    1 cup corn
    1 1/2 to 2 tablespoons chili powder
    1 1/2 to 2 tablespoons ground cumin
    1 1/2 to 2 tablespoons paprika
    1 1/2 teaspoons sugar
    1 tablespoon hot sauce
    Salt & pepper to taste
    2 scallions chopped
    1 Cup grated cheddar cheese
    1 6oz container sour cream

    Instructions
    - Add oil to a large Dutch oven or pot and sauté onion, garlic and jalapeno peppers over medium-high heat until tender (about 5 minutes)
    - Add meat and continue cooking until browned (stew meat does not have be cooked all the way through)
    - Drain fat if needed
    - Add taco seasoning envelopes and amount of water indicated on each envelope
    - Cook until water is evaporated and mixture is thick
    - Add beer, tomatoes, beans, black eyed peas, corn hot sauce and dry seasonings
    - Cook for three hours covered on low heat
    - Remove lid and continue cooking 1/2 to 1 hour longer reducing until desired thickness
    - Serve with grated cheese and sour cream
    - Garnish with chopped scallions

    Chocolate! I always add about 3 tablespoons of chocolate cocoa to any chili I am making. Darkens the dish and really plays well with the chili. Sorta like a mole sauce
